Since their opening in 2009, they have opened 19 stores around Ireland and two franchises in the UK. Jonathan Kirwan and Anthony Murphy traveled to Italy together several times to learn more about making gelato. They use Irish milk for gelato and import the rest of the ingredients from Italy.
